Between the Capuchadou and the Navaja knives

In the past, the people of the village of Aubrac, and especially the shepherds, used only one knife: the Capuchadou knife, with its straight and pointed blade. In the 19th century, seasonal workers brought the Navaja knife from Catalonia. That is how the Laguiole knife was born, a perfect blend of the Navaja and Capuchadou knives. From the first one, it took the shape of the blade, and from the second, it took the handle, which has never stopped being improved since then. 

An essential knife in constant evolution

The Laguiole knife has rapidly become the most famous regional knife and an exceptional knife, with a countless number of classic or foldable versions. It was first made with local materials, then different wood varieties, horns or raw and forged steels. The most remarkable evolution is undoubtedly the “fly” spring, this unique emblem, which is a bee most of the time and makes the Laguiole so famous. Later, it was adapted to outdoor activities such as hunting, with a thicker handle for easier grip. For the hunters’ safety, it is equipped with a safety catch, also called a lock screen. There is the wooden handle made from multiple wood varieties, sometimes blended, ebony, juniper, buffalo or ram horns, and even leather handles, and today, you can also find carbon liners, resins or wine barrel wood or vine stock… Everything is possible.

The fly spring

The fly spring offers many decoration possibilities, such as boars, woodcocks, dogs or fish to replace the bee, regional emblems such as the Saint Jacques de Compostelle’s shell, the Cathar blazon.
